How submerrsible is a winch? I guess if it was under water, I would not be able to hook up the remote right. Is this where a wireless remote comes in handy?

Submersible enough...
There are companies that make add on wireless winch controls. The feedback that I've heard is that there is a delay from when the button is pressed to when the unit actually engages.
I can say that the crew that I wheel with, when we get ready to hit the trails, we'll air down, disconnect the swaybars, and plug in the winch controller, and hook up the snatch strap, etc.

Go hyrdo, no battery upgrade necessary because it only draws 2 amps.
